Processing steps of mango drying:
1,The choice of mango is the most suitable for thick meat and small core, because the skin and core of the mango itself accounted for about 50% of the whole.
Choose unscarred, complete, bright yellow, ripe at 8-9, and fully ripe for a poor taste.

2,Wash and slice the mango first, then drain it, and then pick out the unqualified mango with diseases and insects.Remove the skin (make sure the skin is clean; the skin contains tannins, which can brown the flesh), remove the spots, and cut the flesh into 8-9mm thick slices (in the long direction).Use a knife to stand the mango in evenly spaced slices.

3,Soaking into sugar liquid and put them into trays,and push into mango drying machine

4,For purpose of processing dried mango slice, mango should be evenly cut into slices with a thickness of 1cm, to be put into trays for directly drying. The whole drying process could be generally divided into the following 4 phases:
 
  1. Drying temperature should be set between 32-35 ℃ for 2-3 hours, during when moisture content will be reduced from 80%, until the slice surfaces free of water;
  2. Drying temperature should be set between 36-38 ℃ for 8-10 hours, during when moisture content will be reduced from 60%, until moisture content of mango lower than 35% internally and externally;
  3. Drying temperature should be set between 38-40 ℃ for 5-8 hours, during when moisture content will be reduced from 35% to lower than 20%;
  4. Drying temperature should be set between 42-45 ℃ for 3-5 hours, during when moisture content will be reduced from 20% to lower than 15%.
 
Overall drying time varies from 20-35 hours, depending on slice cutting thickness. Mango slice could be transferred out from the drying oven when moisture content is lower than 15%.

5,Store the dried mango into the packaging bag, pay attention to low temperature and avoid light storage.
